Happy Chanukah!
Chanukah began Wednesday, December 1st, at sundown.  This marks the first of eight nights where Jewish families celebrate the miracle of the oil after the destruction of the Temple.  We eat Potato Latkes (pancakes) fried in oil, light a candles each night in the Menorah or Chanukiah and exchange gifts.  Many families celebrate by giving the children a small gift each night, playing the dreidle game and sharing a festive meal.

Coby's Latke recipe is to die for...serve the latkes with applesauce and sour cream.  Your house and your clothes will smell like fried oil for days but it will be so worth it.

Potato Latkes
• 4 large russet potatoes, peeled
• 1 large onion
• 3 eggs, beaten
• 3/4 cup self-rising flour
• 1 teaspoon salt
• 1/4 teaspoon pepper
• 3 tablespoons vegetable oil
• Oil for frying
• Sour cream or applesauce for serving

Using a food processor fitted with a large grating blade, grate the potatoes. Remove the grated potatoes and squeeze the water from them. Using a smaller grating blade, grate the onion. Set the grated onion aside to drain.

In a large bowl, combine the potatoes, onion, eggs, flour, salt and pepper and oil. Blend well.

Using a large skillet, heat about 1/4-inch of oil.

Working in batches, use a large tablespoon to drop the potato mixture in the hot oil.

Watch for the edges of the latkes to turn golden brown. Once browned, use two forks to gently flip over the latke.

When the latkes turn golden brown, with crispy edges, place them on brown paper or paper towel to drain. Makes 24.

Coby Goutkovitch, of Farmington Hills, and owner of Coby's Judaica store in the Jewish Community Center in West Bloomfield, says his latke recipe was passed along from his great-grandmother, who emigrated from Russia to Israel in 1860.


Analysis per latke: 73 calories (36% from fat), 3 grams fat (0 gram sat. fat), 10 grams carbohydrates, 2 grams protein, 160 mg sodium, 26 mg cholesterol, 22 mg calcium, 1 gram fiber.
